Can’t Drink Just One
If you are limiting yourself to one cocktail right now, our suggestion is that a Minted Mandarin Margarita is the one. Fresh tangerine juice is a treat in itself. So delicious, that you might be able to avoid the temptation of tequila all together (I said might…)
The produce market has been featuring these super cute little crates of tangerines, and that is exactly what we purchased to make this cocktail. A little fresh mint, and boom! Cocktails.
We also used our super handy orange squeezer to extract the juice from the tangerines. It’s low tech, fits easily in the drawer of your bar (or the top drawer of the desk in your cubicle…just sayin’), and clean up is just a quick rinse and soapy sponge off.
You can always convert this cocktail to a mojito by changing the tequila for rum, and muddling the mint in the bottom of the glass before you add the citrus juices, spirits and ice. But while we were testing this recipe, we went with the margarita version, as it was quicker. One less step between you and the beginning of your weekend.
Good As A Frozen Margarita Too
If you have a super awesome blender, you can also toss all the ingredients in that (minus the mint) and make yourself a frozen Minted Mandarin Margarita. But for our taste, we prefer margaritas on the rocks. Slow for sipping, quick and less messy for prep.
And in a pinch, regular fresh orange juice works well for this recipe, but try juicing some tangerines for a change. The juice is complex, buttery, tart and tangy, and a real treat if you are just having that one cocktail.
Okay, maybe just two.
