Everyone Loves Marias
For a lot of us, a Maria cookie is probably the first cookie you remember from your childhood. Low in sugar, crispy and scented with vanilla, Maria Cookies can be found under different brand names in most grocery stores. Similar to a vanilla wafer, or graham cracker, Marias are just what everyone has in their pantry. So whipping up some Lemon Maria Ice Cream Sandwiches only requires having the ingredients on hand.
I bought a small sleeve of Maria Cookies for this recipe, and had to go back to the store for another one. I accidently ate the entire first package. Accidently.
But the other happy accident was that, when I went to the store the second time, I discovered a bag of mini-Marias that made teeny, tiny ice cream sandwiches. The mini Lemon Marias are the perfect after dinner bite of tart sweetness. On top of that, they are just so darn cute.
The Best Ice Cream Sandwiches
Coincidently, the Sicilian lemon ice that I selected to fill my ice cream sandwich is a brand called Siviero Maria. This recipe sort of created itself.
I taste tested my ice cream sandwiches on my nephew, who happens to be my kid next door, and a very selective eater. We both got into a little feeding frenzy, which I had to slow down, so we didn’t have to go back to the store a third time.
Quick and Easy Lemon Maria Ice Cream Sandwiches
Ingredients
1 tub lemon flavored Italian ice, or lemon sherbet
1 sleeve Maria cookies, or 1 bag mini Maria cookies
Instructions
Place a small scoop of the lemon ice on a Maria cookie, and top with another Maria cookie. For mini Maria sandwiches, use a melon baller for the perfect size scoop. Serve immediately or return to the freezer until ready to serve. Lemon Maria ice cream sandwiches can hold for up to 48 hours in the freezer before serving.
