2 cups water (480ml)
1 cup sugar (200g)
1 cup honey (236ml)
1 lemon, sliced
2â cube ginger, peeled and sliced (30g)
1 stick cinnamon
2 lbs. pears, peeled, cored and quartered (1kg)
Pour the water into a 4-quart (4lt) saucepan and bring to a boil. Add the sugar, honey, half of the lemon slices, ginger and cinnamon and allow to simmer at a rapid boil for 1-2 minutes. Add the quartered pears and simmer uncovered for 3-4 minutes. Remove from the heat and allow to cool completely. Remove and discard the lemon slices.
Cut the remaining lemon slices into smaller pieces. Add 1-2 pieces to a clean glass jar. Add the pears, slices of ginger and cinnamon stick from the saucepan. Add the syrup to the jar. Top the jar with a lid and store in the refrigerator.
If you know how to can, these pears can be water bath processed very easily. Otherwise, store them in your refrigerator until you are ready to enjoy!
