Strawberry Margaritas with Mint are just what the weekend ordered. Heck, it’s what the week ordered too! Full of fruit and tequila, what is not to love!
Strawberries and Mint
I love the minty accent in this classic margarita cocktail. You can slightly bruise the mint which releases all of the mint oil and delicious aroma. Simply place a few leaves between your hands and clap! The mint leaves will release all of their flavor which will add fresh flavor to the rim of your glass.
It is essential to rim the glass with salt before you serve the margarita. Easy enough, all you do is rub the rim of the glass with a wedge of fresh lime and then press into margarita salt. Regular salt is too bitter. Kosher salt will work in a pinch. Even Himalayan salt is great on the rim of a glass. Sugar will not work as a rimmer as the sugar dissolves. However, you can make a spicy rimmer as featured in the Watermelon Margarita on the blog. Experiment a little!
A Little Sweetness
Agave syrup or honey work equally well for this cocktail. I had some ranch honey on hand, so that is what I used. Regular granulated cane sugar or simple syrup works also.
If you want to take these Strawberry Margaritas with Mint on the road with you, simply purree the fruit and tequila part and pack in a leak proof container. Once you arrive at your destination, simply combine the pureed cocktail with ice cubes and spin in a blender! Serving the cocktail on the rocks is actually my favorite. Even easier!

Ingredients
Rimmer:
1 tbsp. flaked margarita salt (12g)
Fresh lime wedges
Margarita:
16 oz sliced strawberries (480g)
3 oz. tequila (88mlml)
3 oz. orange liquor (88ml)
½ cup fresh lime juice (120ml)
¼ cup honey or agave syrup (60ml)
2 cups ice cubes (500g)
Fresh mint for garnish
Instructions
Spoon the margarita salt into a circle on a flat dinner plate. The circle should have approximately the same diameter as the cocktail glass you are using.
Prepare the margarita glass by moistening the rim of the glass with the fresh lime wedge. Press the rim of the glass into margarita salt. Set aside.
For the margarita, combine the strawberries, tequila, lime juice, orange liquor and honey in the container of a blender. Pulse once or twice to combine. Add the ice cubes and puree well.
Pour the margarita mixture into the prepared glasses. Serve immediately garnished with fresh mint and a thinly sliced lime wedge.
Notes
To release the mint aroma, simply clap the mint leaves between your hands.
