6 cups water (1.5lt)
1–2 whole cinnamon stick
2 large tea bags, or enough black tea to make 2 quarts/2 lt
Juice of 1 lemon or lime
2–3 tbsp. honey or to taste (30ml-45ml)
8 oz. bourbon whiskey (240 ml)
Place the water and cinnamon sticks in a 2 qt. saucepan and bring to a boil. Allow to simmer for 1 minute. Place the tea in a large glass bowl or glass measuring cup and pour over the boiling cinnamon water. Allow to steep for 3-5 minutes.
Remove the tea bags (or strain out loose tea) and cinnamon sticks. Add more water so tea amount equals 6 cups. Add the lemon juice, honey and bourbon and stir to melt honey. Keep warm in a thermal carafe or insulated water bottle until ready to serve.
Notes: Read package directions on tea to find out what quantity is needed to make 2 qts/2 lt of iced tea. This will be approximately ½ oz or 12-14 grams total.
Also note, avoid reheating tea once you add the bourbon as heat will cause the alcohol to burn off and evaporate
