1–2 tbsp. olive oil (15-30ml)
4 tomatillos, husked and washed
2 cloves garlic
1 large avocado, peeled and seeded
Salt to taste
Heat an iron griddle or skillet on the stove along with a small amount of olive oil. Once heated, place the tomatillos on the griddle until the skins are roasted, about 3 minutes. Place the cloves of garlic on the griddle and roast for 30-45 seconds. Remove the roasted tomatillos and garlic and place in the container of a blender.
Add the avocado to the blender container and salt to taste. Blend the mixture until smooth. If desired, pour the salsa into a squeeze bottle for easy serving.
