Barbacoa Tacos (Stove Top Method)

Ingredients

  • 23 lbs beef cheek meat (1kg-1.5kg)
  • 2 cloves garlic
  • Salt to taste

Instructions

  1. Place the beef cheeks in a 3 qt (3lt) lidded saucepan or Dutch oven.
  2. Add the cloves of garlic, plus 1/4 cup of water (60ml). Season with salt. Cover, and bring to a simmer over high heat.
  3. Lower the heat, and allow the barbacoa to cook for 2 1/2 hours, until the meat is fully cooked and tender. This also works well with a slow cooker.
  4. Serve hot with tortillas, garnishes and your favorite salsa.

Notes

Oven Method: Heat your oven to 400°F (204°C). Place the beef cheek meat on a sheet of heavy aluminum foil. Place the cloves of garlic on top, and season with salt. Wrap the beef cheek meat in the foil, and place in a baking pan. Bake the meat for 2 ½ hours, until the meat is fully cooked and tender.
