2 cups water (500ml)
2 cups sugar (400g)
4oz (125g) peeled sliced ginger
Combine ingredients in a small saucepan and stir well. Bring to a simmer, cover and lower the heat. Simmer for 30-45 minutes. Remove from heat and strain through fine mesh strainer, removing the ginger/fruit. Cool completely before pouring into bottle. Stores in fridge for 1 month.
