Chocolate Shell Topping is so special and so easy to make! How often do you leave the house for an ice cream treat? You can make something better and more delicious at home. If you have chocolate chips, you can make this delicious chocolate shell in minutes!
Here at the ranch, I usually have chocolate chips in the cupboard as well as coconut oil. Ice cream…not so often. Usually ice cream melts on the way home from the supermarket. Recently a convenience store opened up about 10 minutes from my house, and yeah, they have Blue Bell Ice Cream! We are forever changed! LOL!
Homemade Ice Cream is the Best!
Occasionally I will make homemade ice cream. I tried this new recipe for Peanut Butter Ice Cream, and this was a hit. I know, making ice cream at home takes a full day – from chilling the custard to churning the ice cream. But have you ever eaten home-made ice cream? The rich flavor is out of this world, and very much worth the effort.
I am going to keep experimenting with this recipe for Chocolate Shell Topping. My goal is to make ice cream bars, ice cream bon bons and chocolate dipped frozen fruit. I know if I add a teaspoon more of coconut oil, I can make a thinner shell. I have a lot of plans for this recipe. But right now, we are still enjoying it on top of the Peanut Butter Ice Cream that I made. Both are wonderful. Together they are insanely delicious!
Microwaveable
You can make this recipe in the microwave by putting the ingredients in a glass bowl and heating for 1 minute on high heat. Make sure the chocolate doesn’t boil. I prefer the stovetop method for gentle melting. I am always very careful to make sure my dessert recipes turn out correctly! No dessert disappointments!

Ingredients
8 oz chocolate chips (1½ cups/250g)
2 tbsp. coconut oil (30ml)
Instructions
Place the chocolate chips and coconut oil in a small saucepan. Heat over low heat until the chocolate chips begin to melt. Remove from the heat. Stir as chips will continue to melt. Do not cook or simmer the chocolate. Pour over ice cream and allow to harden before serving.
Notes
Heat the chocolate very slowly. If the chocolate appears grainy, remove immediately from the heat and stir in an extra 1-2 tablespoons (15-30ml) of coconut oil to smooth it out.
