Spicy Chicken Lollipops with Tabasco Honey are so easy to make! What a great recipe before football season hits the Superbowl highlight! I baked these for lunch at it was an instant hit.
Snacks can fall on the unhealthy side of the menu. Even though these are called chicken lollipops the honey sauce and bacon can be optional. Everyone likes to snack during the football game! Why serve dishes that only a few team members can enjoy?

Spicy Chicken Lollipops with Tabasco Honey is probably the easiest chicken recipe I have created in a long time. Paired with the parchment paper liner used for baking, the recipe is as easy as sprinkling the chicken with spices and mixing up 2 ingredients for the honey tabasco sauce.
Why are they called chicken lollipops? The skin of the leg joint edge of the bone is trimmed down to expose the drumstick. The chicken meat becomes compact which makes it juicier when cooked.
Quick to cook
Even though chicken is famous for requiring long cooking time for safe eating, chicken lollipops only require about 30 minutes to fully cook. Chicken lollipops are ideal if you need a lot of protein in a short amount of time. I always keep some in my freezer for quick hot lunches or suppertime when guests pop by.
The bacon in this recipe is optional. If you ditch the bacon, make sure to brush the chicken lollipops with olive oil before sprinkling with the spice mixture.
If you are avoiding sugary sauces, you can always serve your Spicy Chicken Lollipops with plain ol’ Tabasco sauce. It’s the honey Tabasco sauce without the honey. You can also add celery sticks and blue cheese dressing on the side for a carb-free meal, similar to Buffalo wings. I will be making all of the above because I really love this recipe.

Ingredients
Spice mix:
1 tsp. fine sea salt (4g)
½ tsp. ground pepper (1g)
1 tsp. granulated garlic (2g)
1 tsp. cayenne pepper (2g)
1 tsp. smoke paprika (2g)
1 tsp. ground coriander (2g)
2–3 tbsp. olive oil (30-45ml)
2.25 lbs./ 36 oz./1 kg chicken drumstick lollipops
1 slice bacon for each drumstick (optional – about 9-10)
Sauce:
1 tbsp. Tabasco sauce (15ml)
3 tbsp. honey (45ml)
Instructions
Heat your oven to 375°F (190°C). Line a baking pan with parchment paper.
Combine the spices in a mixing bowl. Brush each drumstick with olive oil. Wrap the bone tips with aluminum foil to prevent charring.
If desired, wrap each drumstick with a slice of bacon. Sprinkle the drumsticks well with the spice mixture and place in the parchment lined baking pan.
Place the pan in the oven and roast for 25-30 minutes or until a meat thermometer reads 165°F (74°C).
Meanwhile, make the sauce by combining the tabasco and honey. Warm for 10-20 seconds in the microwave before serving.
Serve the chicken lollipops with the warm Tabasco honey.
