Entomatadas are a family dish that is quite simple. Most people opt to make their spicier cousin, the enchilada. But entomatadas are low on the spice meter and high in tomato flavor. This is a great dish for family suppers.
This is a very light dish and would work well in low-calorie diets. Of course, added toppings can provide more calories, but I stopped counting calories a long time ago!
Entomatadas means “made with tomatoes”
Even if you don’t speak Spanish, you might guess that the focus of enchiladas is the flavor of chiles. Entomatadas derive their name from the flavor focus of tomato. Both are delicious, but entomatadas are just a little bit milder in flavor.
Of course, the main ingredient in an entomatada is the tomato sauce. Red ripe tomatoes are essential to the success of this dish. For that reason, the filling can be whatever you want. I like the mild flavor of shredded chicken. However you could use whatever vegetable you like, such as potatoes or cauliflower. As long as the filling is pre-cooked, you can use whatever you like!
A Basic Recipe
This is a very basic recipe, so you can personalize the flavors and toppings. You can always add 1-2 fresh chile serrano if you want a spicier tomato sauce. You can add a pinch of ground cumin, oregano, cayenne or epazote if you like.
I would serve these delightfully light tacos alongside refried beans, Mexican rice and a nice salad. An ice-cold beer would definitely be right next to my plate. Here at our family table, we would pass the Mexican crema as an extra topping and I would also feature a good salsa or guacamole. This dish might verge on being healthy. More importantly, it is comfort food that is good for your soul!
