I made some Strawberry Grapefruit Marmalade today. If you aren’t the type that usually makes home-made jam, this one is really easy because it is made in the microwave and doesn’t need commercial pectin.
Strawberry Grapefruit Marmalade is Easy to Make
Easter is in two weeks, and as a pleasant distraction, I’m already planning how we will celebrate. I will be posting more recipes that will work for a low-profile home celebration in 2020, and hopefully you will find them easy and inspiring.
I like having homemade jams and marmalades on hand because they can pull together a cake or dessert quickly. Here at the ranch, I can’t run to town whenever anyone drops by for dinner. So, every week I have some sort of special food project that can contribute a fresh touch to our meal. Home-made bread or biscuits, pickles, salad dressing…something that took a few minutes to put together but provided loads of flavor and deliciousness. And ultimately, some convenience.
Very Versatile for Desserts
Of course, you can enjoy this marmalade on toast, but I’m going to work on a cake and use it as a filling. My husband zoomed in on the marmalade as a yogurt topping with granola. Oooh, maybe a trifle would be good… The possibilities are endless!
Although, I tried this marmalade as a baked empanada filling, which I can’t recommend. Yet. Sometimes it takes a few tweaks to get the exact recipe for the exact use. This marmalade works best if it is not baked or cooked again as it becomes very juicy. But that juiciness is absolutely lovely as a cake or custard topping. Ice cream sundaes? Yes, please!
Easter this year will be a bit odd with the quarantine in place. But our quiet little home celebration won’t be flavorless. We are glad to be together and are grateful for our good health.

Ingredients
4 cups hulled & sliced strawberries (664g)
1 cup grapefruit sections (225g)
3/4 cup sugar (150g)
3 tbsp. lemon or lime juice (45ml)
Instructions
Combine all of the ingredients in a large microwaveable bowl. Stir well so that the sugar is evenly distributed throughout.
Place the bowl in the microwave. The marmalade needs to cook for total of 20 minutes, but it needs to be stirred every five minutes. Simply set the timer for 5 minutes, cook on high, and then stir. Repeat the five minute ‘cook and stir’ pattern 3 more times.
Carefully remove the bowl from the microwave and allow the marmalade to cool completely on your countertop. Store in the refrigerator once it is cool.
